Chicken Curry II

cut onion, ginger and garlic and brown in olive oil. add cloves, cardamom, cinnamon and cumin seeds : ) 


add tomatoes:


add hormone free, vegetarian feed chicken : ) 


don't forget salt and red mirchi. then cover and cook for ten minutes on less than medium. 


then add MDH karahi masala:

Tandoori chicken I

Tandoori Chicken mixture:
1/8th of half gallon of buttermilk
two tsps salt (you need a lot of salt)
two tsps tandoori masala
red mirchi
8 drops of red food coloring 
little bit of lemon juice 

update: not sure what my dad was thinking that day but adding cardamom and saffron to your tandoori chicken is actually not a thing. he was in one of his moods.
and typically we don't use tandoori masala but it is a decent alternative and I will update with another recipe. 


chicken to be soaked:

soak chicken for 24 hours!

I am not allowed to transfer my undergraduate course Instructional Technology even though you're allowed to transfer other undergraduate courses for Master's classes!!!!!! And I'm not allowed another adviser!!!!!!!!!!!!! What University doesn't allow you to change your adviser!?!!?!?!??!?!?!!!!

So today I wrote a letter to the Dean of the Graduate program at Cal U of PA and expressed my frustrations with the program. I attached the relevant documents and emails pertaining to two professors who accused me of having a tone in my emails (what?!!!!??!?!!!!). I also requested that my undergraduate Instructional Technology class be transferred in to satisfy one of the Master's requirements (duh) and that I get a new adviser (also previously denied). It felt so good to mail the package and it only cost something like $2.50 to mail it but I hardly thought about it. What a relief.

so my dad recently went to an optometrist in MD for an eye exam and a new prescription for two pairs of reading and driving eyeglasses. The business the doctor works for gave him a quote of $965 just for those two pairs of glasses!!!! all those special types. and instead my dad went to a local optician and got the same glasses made for $110.

So today I talked to Drexel Univ. and am again traumatized. I was told on the phone that I have the potential to transfer the Master's credits I've already taken into their online Master's program. But they will not do a transcript review until I apply. I have to fill out the application, pay the fee, get two letters of recommendation, pay to get all my transcripts sent, write an essay and only if I get accepted, they will determine whether the credits can transfer. Such brilliance in the teaching profession.

this lady today in the gym was banging the weights down so hard on that machine that you exercise your upper muscles with....so hard I got shocked a couple times....I asked her if everything was ok and if she could keep it down a little....and then she banged it even harder after that I got so shocked and pissed....what is wrong with people....such unsophisticated behavior, such crassness....

I'm so constantly surrounded by unprofessionalism (want to start a couple small businesses? get ready for some real shit.) ....the few professionals I know I hang on to for dear life..

#trying to feel better 


Today I was greatly inconvenienced by the University. I e-mailed this prof too late for this assignment. We were supposed to email him by the end of last week so he could mail us the files we need to complete this assignment (why are we mailing docs for an online program??). However, I emailed him two days ago. He asked me why I was late in contacting him and said I could pick up the CD with the flies on it from his office today between 2:30 and 3:15. I reached the office exactly at 3 only to find an office assistant telling me he never came to the office today. I drove a whole hour to this goddamn office only to find an absent professor and no flies.

In this same email two days ago I asked the professor if he had received the last eight assignments I submitted (two per week) over the last month because I have no grades for them. I'm in utter shock.

Fortunately, the assistant was very understanding about the situation and agreed with me that the University is unprofessional. I made a huge mistake in going to Trash University aka California University of PA.

This last time, I got two periods in a row. After my one period was finished, I got another period just six days after. So I went to the gynecologist today and they found a polyp, which I'll have removed through a quick outpatient surgery. The uterus wants me to get rid of the polyp so that I can have regular periods again! Anyway, drivers I drive with have to drive smoothly because otherwise the polyp goes plop plop plop plop lol.

I'm having a wonderful field experience today. I have to do 16 more hours of this. I continue to have lower back issues. During my last acupuncture appointment, I was told I would need several structural integration massages as my back is not aligned. My left side is surprisingly strong while the right side needs work. Wow. While I was driving to school today I remembered the days of elementary school when me and my bff would sit in the back of the bus and sing 'I like big butts and I cannot lie' and have half the bus sing along. Yea!!!! ; )

Palak Paneer

cut lots of ginger:


cook frozen spinach in microwave for forty minutes! we have ten packets total:


then take half and blend in blender:


cook ginger in oil: 


have paneer ready:


then add crushed tomatoes and salt, garam masala, red mirchi and haldi to ginger mixture:


then add spinach a bunch at a time to tomato/ginger mixture and cook for a bit:


mix:


add paneer:


yummy : ) 

Jai Mata Di - Chune

prep: soak chune overnight. then before boiling, add like two teaspoons salt and a teaspoon haldi (turmeric):


then turn heat on and add tea. this gives the chune the dark color. who knew I was eating chai all these years : )


it will look like this (this is the other pot):


then add a couple alubukharas:


toss 'em in there:


then cover pressure cooker and cook for half hour or so: 


rinse pot under cold water and make sure no steam is coming out of the top. then open up and make sure chune are cooked:

this pot needs more cooking:


then cook ginger in oil:


add almost one whole big can of crushed tomatoes to ginger mixture:


add salt, haldi, red mirchi, and chana masala (one and a half teaspoon for every raw pound of chune)


resulting mixture:


then add to chunne:


mash a bit and cook for a few minutes:
