Eggplant (Bhartha)

cook onion, garlic, green chile and fresh tomato in oil. 


actually first roast the eggplant in oil on the pan. forgot to take a picture earlier:

viral cutting:


add eggplant to mixture as well as salt, red mirchi and very little garam masala (coriander and cumin powders):


mix and cook:


I'm not a big fan of eggplant and mom is allergic to it so this is my portion. dad can have the rest:
