for lunch now I eat the most amazing bean sprout veggie sandwich: mustard, coriander, tomato, green pepper, mozzarella cheese, bean sprouts and jalapeƱo. w veggie chips. only 130 calories in 38 chips. and I only eat like 16 chips. 
Last night like every other night, I had thoughts around 2am when I went to bed like 'ok tomorrow I'm gonna get up at 9:15, chai, meditation, start laundry, get on the elliptical then shower, emails, then work from 12 to 6, finish laundry, dinner, Facebook, then work then go to bed. It's noon and all I've done so far is drink chai and watch a little Rachael Ray and The View and seethe in anger about humanity and am just now going to start laundry and email my professor. It's going to be a long week.

Breathe deeply while completing tasks. All 'to dos' related to work, family, art, social and health related should be managed with a calm mind. Spend time with yourself and your friends especially if you're single to feel sane. Understand that the amount of work to be done will always feel overwhelming and the work will be waiting for you like a hungry child. You may feel massive amounts of guilt for not being able to attend to all hungry children. Focus on one thing at a time while you simultaneously organize everything.

Aloo Stuffed Green Peppers

peel 5 or 6 Idaho potatoes, wash and then cut cubicle style:


there can be no remaining brown spots. so peel further and then wash again:

add salt and coriander:


and red mirchi (spice) and garam masala (coriander and cumin):


mix: 


cut green pepper to store the aloo mixture:


stuff the green peppers as much as you can:


beautifully stuffed green peppers: 


then drizzle oil around the corners and in the middle. cover with aluminum foil and bake on 350 degrees for an hour and a half or so:

Aloo Tikki

Aloo Tikkis are a yummy appetizer. Boil potatoes (8 or 9?), cut up and add two small chopped onions:


add coriander leaves and salt: 


also add red mirchi (spice) and garam masala (coriander and cumin):


crush anardana (pomegranate seeds) in a mortar and pestle:


also prepare paneer (can buy this at the Indian store) and mash up:


add salt, red mirchi (spice) and garam masala (coriander and cumin):


add crushed anardana seeds:


also add pieces of bread to the potato mixture and then mash the whole mixture:


then prepare the pedal (dough ball) like this:



add a little of the mashed up paneer:


then roll it all into a pedi (dough ball):


then cook on the pan:


beautiful tikkis:


incredibly delicious with green chutney on top:

can also eat with chhole (chick peas):

I am overjoyed by the news that now all same-sex couples have a right to marry in the US. I had made a commitment years ago that I wouldn't get married until all people in this country had a right to marry. This news is much needed after a long period of discouragement for many and especially after my faith in humanity was struggling. I feel again now that Light can truly overcome the darkness. Today the university emailed me and told me that no, I don't need to take four prerequisites, not one prerequisite, but indeed I need to take EIGHT physics prerequisites in order to be teacher certified in physics. What brilliance I get to deal with. I had agreed to take the initial four prerequisites because that's what they told me and that affected my decision to apply at this program. I feel like transferring or dropping out of this nonsense.

#got my period

I am in so much pain today. I was up late last night finishing an assignment and then woke up late today and spent nearly one hour in the shower and now laying on my bed with a hot water bottle and three Advil finally kicking in. I think maybe because I didn't go to acupuncture my last cycle or because of stress, I'm having this much pain. ugh. I'm in such a bad mood, don't want to talk or see anybody and have homework due tonight. I had to delay my travel plans for my sister's graduation because of this. I just can't imagine sitting in pain for hours in the car and then having to read at the same time. But these are the moments for which I'm eternally grateful: when I don't have to travel in pain and I can do my work peacefully in solitude in bed.
